Le saint-paulin est la version industrielle du Port-salut1. Sa zone de production est très vaste avec la Basse-Normandie, la Bretagne, la Lorraine, le Nord-Pas-de-Calais.
Fabrication[modifier]
C'est un fromage à base de lait de vache, à pâte pressée non cuite, d'un poids moyen de 2 kg. Il se présente en meule de 20 cm de diamètre sur 6 cm d'épaisseur, caractérisée par une croûte lisse de couleur orange, et une pâte souple, assez élastique, de couleur crème pâle à jaune pâle.
